Before I start I have to own up to a fact: I don't own an air fryer.
Are you shocked? Because I am.
I, however, have awesome friends that let me borrow kitchenware without questioning me. Especially when these friends know that whatever I'm making, they're getting a freebie from it!
On my Facebook I had seen a recipe floating around about Buffalo Chicken Dip Egg Rolls.

I have a strange obsession with Buffalo Chicken Dip, but in an egg roll? That's like dip on the go for me! I'm so game.
Let me just tell you that yes, they were REALLY GOOD! But of course they are, because I am who I am and I enjoy baking and cooking tremendously.
Do you want to know a secret? I realized while grocery shopping for my ingredients that egg rolls could practically be anything you wanted them to be. So do you want to know what else I made?
So back to reality. As you all know I do have children. Two that would rather eat the ingredients before the final product, and one that would rather have my constant attention or get into mischief. So I decided (with advice from my momma) to make these as simple as possible.

So back to reality. As you all know I do have children. Two that would rather eat the ingredients before the final product, and one that would rather have my constant attention or get into mischief. So I decided (with advice from my momma) to make these as simple as possible.
The Buffalo Dip
I followed the basic instructions for the dip on stove top. Typically I make this in a crock pot so it stays warm, but for egg rolls that wasn't necessary.
Ingredients:
1- 16 oz shredded chicken
1 block (8oz)- cream cheese
1/2cup- ranch
1/2cup- Franks Red Hot
2cups- Mild Cheddar
My family is not a fan of blue cheese, so I replaced with mild cheddar which we enjoy immensely.
-No regrets on that switch out. At all.
Removed from stove, I sat the dip next to my egg rolling place, and dug in!
Egg rolls aren't something I typically use, so this was a learning experience for me. I had to google how to roll egg roll wraps, and there were two different basic options, so I just went with this one:
After wrapping the dip, I found out that getting the last corner wet with water helps it hold to the rest of the egg roll.
All ready to go!
I decided to spray some with coconut oil, and left some without to see the differences, and to be honest there was none that I noticed.
I set the temperature at 370, and the timer at 5 minutes, than flipped them for another 5!
Tada! They look messy, but taste delicious!! Definitely need to buy myself an air fryer!! OR *hint hint* my birthday is coming up!
Lessons learned-
I was definitely over stuffing these egg rolls, so once they began cooking in the air fryer, they were popping open. Did it change the flavor? Nope, but it did make them a little more messy.
With my first experience of egg roll wraps, I didn't realize they were stuck so closely together, so make sure you're only handling one wrap, not two like I was!!! Thankfully I had noticed the mistake and was able to take the second wrap off of the egg rolls I had already made!
